Whole30 for the Month of February

Hi Friends! Happy Wednesday! Today, I wanted to share with you the beginning of my Whole30 journey. I've attempted Whole30 once before and felt very unprepared so it was a bust. I got my act together this time and I'm doing it. I'm officially on Day 4 and so far so good.

Tuna Avocado Cucumber Sandwhiches

This year I made some new health goals, part of those goals were to figure out new ways to re work food. Ditching all the extras I don't need, reading labels and really taking a look at what I'm putting into my body. 

I've been wanting to do the Whole 30 for a while now, next month I'm starting Whole 30. My goal this month has been to find a list of foods and recipes that I can use next month while trying out Whole 30. 

Today I'm excited to share with you these easy and simple Tuna Avocado Cucumber Sandwiches. Here's what you'll need:

1 can Bumble Bee Tuna

1 Avocado

3 Green onions, chopped

Salt & Pepper to taste

1 cucumber, sliced

Drain your Bumble Bee Tuna place that in a small bowl. Add in your avocado and mash them together till blended well. Then add your green onions and salt and pepper. Do a little taste and make sure you have the right amount of salt & pepper. 

Then slice up your cucumber, I like to do not so thick slices but not thin either. Somewhere in the middle is good so you can make yourself a sandwich. 

Then start assembling your sandwiches putting the tuna mixture between two of the slices.

These are the perfect afternoon lunch, or quick snack. The avocado is a healthier choice than mayo, and the cucumber is a healthier choice than bread. Making this the perfect Paleo or Whole30 approved meal.

Surprisingly very filling and makes quite a few! I'm excited about finding healthier meals and snacks for this new year to take my health journey even farther this year.

Mini Egg & Ham Muffins

I made these quick and easy mini egg and ham muffins a couple weeks ago. They are delicious and a great breakfast for me to add to my morning coffee and protein smoothie. They were also a great way of using up the leftover Christmas ham. 

I'm planning on making more this week. I used a mini muffin pan and put them in the fridge for the week. It makes it really quick and easy to pull them out in the mornings and pop them into the toaster oven for breakfast. 

Preheat your oven to 400 degrees. 

4 eggs, beaten.

1/2 cup of ham, diced.

1/2 cup spinach, chopped.

Spray your muffin tin with coconut oil, mines from Trader Joe's. Pour your egg mixture into your muffin tin. Place in over, bake for 20 minutes. 

Store in an air tight container. They will last in the fridge for about a week. 

Eat & enjoy! I love having these in the mornings. 

Game Day Buffalo Chicken Pizza with Foster Farms Crispy Chicken Strips.

Anything buffalo chicken related is my Husband's favorite! I've been making this pizza for a long time now and it's always a crowd pleaser, he especially loves it on Saturdays for college football watching! 

This is the perfect yummy combination of buffalo sauce and pizza! Learn how to make this on your own below. 

For the chicken I used Foster Farms Crispy Strips, I make the whole bag and only use about half but the rest I use up for lunches during the week. Bake according to the package directions.

After they are done baking let them cool enough so you can pick them up and cut them into small strips. Put them in a bowl and toss with your favorite buffalo sauce. I like to make sure they are all generously coated with the sauce. I use Franks Buffalo sauce. 

I also enjoy using a pre made crust, it makes the prep time easier. I cover the entire crust with ranch dressing and then about 1 tablespoon of buffalo sauce and mix it all together evenly on the crust. Then I top it with my chicken, 2 chopped up green onions, and a handful of cilantro before covering the entire top of it with shredded cheese. 

Bake according to the package directions on your pre made crust. I did mine for about 20 minutes. Cut into slices and enjoy!

Family Night at Rumbi Island Grill

Every Friday night we have family nights in our home. It's a great way for us to connect together and talk about our week.
